South Beach Diet Recipe : Anchovy and Tuna Salad (4 servings)
Ingredients for anchovy and tuna salad
- 1 large head Boston lettuce
- 1 pound fresh green beans (cooked)
- 3 hard-cooked eggs
- 1 medium red onion
- 2 medium tomatoes
- 1 green pepper
- 5 anchovy fillets, drained
- 2 cans (7 oz. size) water-packed tuna
- 1/2 cup pitted ripe olives
Dressing:
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 clove garlic, crushed
- 1 tbsp. chopped fresh basil
- 3/4 tsp. salt
- 1/2 tsp. dry mustard
- 1/4 tsp. cracked black pepper
Mix well to form dressing
Preparation Method for Anchovy and Tuna Salads
Arrange lettuce in chilled shallow dish. On lettuce, arrange beans, eggs, onions, tomato and green pepper.
Top with anchovies. Mound tuna in center with olives. Drizzle with remaining dressing. Refrigerate before serve.
