Title : Eggplant Omelet ( 4 servings)

Ingredients

 

Preparation Method

Peel eggplant.  Cut into small cubes and soak in bowl of cold water for 1/2 hour.  Dry eggplant well.

Melt 3 tablespoons margarine in skillet.  Add eggplant and garlic powder.  Sauté until eggplant begins to brown.  Add tomato sauce set aside.

Place 1 tablespoon margarine in large skillet and allow to melt over very low heat.  Add egg substitute and continue to cook over low heat until the set.

Spoon eggplant mixture onto egg substitute and either fold it over or roll it up.
