Preparation Method
Heat oil in skillet and brown celery and zucchini well.
Add garlic in last 2 minutes.
Add tomato, and simmer for 15 minutes, adding basil for last 5 minutes.
Add egg substitute, Parmesan cheese, salt, and pepper. Cover skillet, and cook slowly for about 10 minutes.
Turn over for a few minutes to brown other side lightly.
