Ingredients

Preparation Method

Place tuna fish in bowl and break into small pieces

Add egg substitute, salt and pepper, parsley, anchovy fillet, mix well

In skillet heat oil, add egg mixture, and simmer on low heat, covered for about 10 minutes.  Turn and brown lightly on other side for a few minutes.

If you have trouble turning omelet, cut in half and turn half at a time.  Serve.
