South Beach Diet Recipe : West Indian Chicken Creole (4 servings)

Ingredients

Preparation Method

Wash and dry chicken

Combine lemon juice, pepper, salt and soya powder.  Roll chicken in mixture until well coated.

Melt margarine in large skillet and sauté onion and chicken until well browned on all sides.  Add broth and tomato.  Simmer, covered, over low heat for 1 hour.  Stir often.
