Selenium is among the chief antioxidant minerals.  It works by producing glutathione peroxides, an antioxidant enzyme that can turn troublesome free radicals into harmless water.  This mineral also works closely with vitamin E in protecting the body against free radicals. 

Selenium is found to safeguard against cancer.  Studies have found that people with high levels of selenium have lower rates of skin , prostate, colon and lung cancer.

Selenium is plentiful in carbs such as whole grains and legumes.  To get more selenium rich carb into your diet:

  • Go meatless several times a week by serving bean and legume base dishes.

  • Opt for whole grains over refined cereals as selenium is often remove during the milling process

  • Select high selenium food.  Some of the best vegetables source include onions, garlic and broccolli.
