Vitamin E is emerging as an important nutrient for fighting of colon cancer. In a five years study of more than 35 000 woman researchers observed that those who developed colon cancer were same one who had low dietary intakes of vitamin E. The researchers concluded that this vitamin protected cell membranes in the colon against destruction that could lead to cancer.
Vitamin E also inhibit formation of carcinogenic substances known as "nitrosamines" which are form from chemical called nitrate and nitrites, sometimes found in processed meats like hot dogs and salami. Nitrosamines have been implicated in the development of stomach cancer.
Vitamin E is found widely in foods, particularly vegetables oils. One important source of the vitamin is wheat germ. Fruits and vegetables also supply appreciable amounts of vitamin E.
To increase vitamin E intake:
Sprinkle wheat germ on your cereal in the morning or mix wheat germ with yogurt
Eat an apply a day
Use dried black currants in lieu of raisins because currants contain vitamin E
Stick to rich whole grains such as what, rice, oats, and barley rather than refine grain products, because vitamin E is removed in the milling process
